白ワインは白ブドウから造られる、酸味と果実味を特徴としたワインです。基本的な醸造方法とその他の特殊な醸造方法を説明していきます。

収穫 vendange
ワイン用ブドウの収穫は9月から10月に行われ、収穫方法は手摘み収穫と機械収穫があります。
手摘み収穫のデメリットは、熟練者の手配が困難・作業時間が長くかかる・労働コストが高くなるなどがあげられます。
手摘み収穫のメリットは、ブドウが傷つきにくい・傷んだ果実を選果出来る・機械収穫できない場所でも収穫できるなどがあげられます。
機械収穫のデメリットは、ブドウが傷つく可能性がある・収穫機の費用が掛かることなどがあげられます。
機械収穫のメリットは、作業時間は手摘みに比べて短時間で済む・収穫機のの操作を覚えれば誰でも出来るなどがあげられます。
破砕 foulage・除梗 égrappage
収穫・選果したブドウを房ごと皮や種と一緒につぶした後に、皮や種と梗を取り除きます。この時にワインの皮に付着している酵母もいっしょにジュースの中に移行します。
圧搾 pressurage
除梗した個体を圧搾機にかけて更に液体を得る作業をします。
絞り過ぎると渋みなどが出過ぎるので、搾りが軽いものはフリーランワインに、搾りが強いものは渋みなどが出過ぎるのでブレンド用ワインになります。
更に絞った皮や種とを発酵させて、蒸留したりもします。
主発酵 fermentation alcoolique
果醪を木の桶やタンクに移して発酵させますが、この時にワイン酵母を添加したりします。その他にはブドウに付着した酵母や醸造所に付着した天然酵母を取り込んで発行をさせます。
その酵母の働きによって果汁の中の糖分が、アルコールと二酸化炭素に変化することが発酵です。
発酵温度は15～20℃でブドウの糖分が足りないときはアルコール発酵を促すために補糖します。
日照時間が足りない年の果実は糖分が十分でなくすっぱきなりますよね。ワイン用ブドウの糖度は22度以上、食用のブドウの糖度は16度以上が基準になってます。
マロラクティック発酵 ｍalolactic fermentation
効果はワインの酸味をやわらかくしてまろやかにすること、複雑性を増して豊潤な香味にすること、瓶詰後のワインを微生物学的に安定させることです。
なぜかというと、ワインに含まれるリンゴ酸(malic acid)が乳酸菌の働きによって乳酸(lactic acid)変化するので上記のような効果が得られます。リンゴの酸味よりヨーグルトの酸味の方がまろやかですよね。
熟成 élevage
タンクや樽の中でタンニンの角が取れ、酸味が落ち着き、まろやかな味わいになります。途中で底に溜まったカスを撹拌して旨味成分を抽出したりします。(batonnage)
澱引き soutirage
熟成中にブドウ由来のポリフェノールなどの混合物が沈殿するので、上澄みを別の容器に移し替える作業で、貯蔵や熟成中に数回行います。
清澄 collage
ワインの清澄度を上げるために必要に応じて卵白・タンニン・ゼラチン・ベントナイトなどの清澄剤を使ってカスを取り除いたりします。
濾過 filtrage
ワインを瓶詰めする前にフィルターや遠心分離機などを使って濾過します。
瓶詰 embouteillage
出来上がったワインを瓶に詰めてコルクなどで栓をしてシールをしてラベルを張って出来上がりです。
ワインの栓は天然コルク・圧縮コルク・一部天然、一部圧縮コルク・樹脂製（プラスチック）コルク・スクリューキャップ・王冠・ガラス栓等の種類があります。

クリオ・エキストラクシオン(crio-extraction)
マイナス7℃以下に凍結させた果実を圧縮し、その果汁を発酵させる醸造方法です。
果実が凍ることによって水分が蒸発して、ブドウの糖度が上がり、成分が凝縮されます。
