【白酒】はどんなお酒？

読み方と原産国の紹介

白酒の読み方は「パイチョウ」で中国発祥の蒸留酒です。

白酒は中国の中でも地方によって呼び方が違い、中国北東部・山東省・四川省などでは白乾児（パイカール）、楊州では辣酒（ラーチョウ）、成都では乾酒（カンチョウ）と呼ばれています。

一般的にアルコール度数が高く50度以上のものが多かったのですが、現在は嗜好の変化から38度の低度酒が主流になっています。

原料と造り方

原料となる穀物は大麦、小麦、エンドウ、高黍などでつくり方は以下のとおりです。

  1. はじめに、穀物を砕いたものを水でこねて形を餅状にして、暖かい部屋で酵母を繁殖させて麹を作ります
  2. 蒸した高黍に餅麹を混ぜて、地面に掘った「発行窖池(はっこうこうち)」と呼ばれる穴の中で発酵させます
  3. 発酵が進んだ醪に籾殻や落花生の殻を混ぜて、空気の通りを良くして状態で蒸留します
  4. 蒸留後の醪に再び麹を混ぜて、発行窖池で発酵を数回繰り返します
  5. 蒸留された液体は瓶やカメで熟成させて出来上がります

おすすめの飲み方はこれ！

香りは豊かで熟れたバナナやパイナップルのような、吟醸香のカプロン酸エチルが全面に感じられます。
